Texas Style Smoked Brisket Recipe

Ingredients:


  • 1 whole packer brisket (8 to 16 pounds)
  • Yellow Mustard
  • Cattleman's Brand Seasonings Brisket & Steak Seasoning


Instructions:



  1. Start by trimming your brisket. Keep it cold in the refrigerator until you're ready to work on it. Flip the brisket over, so the point end is underneath. Trim away any silver skin or excess fat from the flat muscle.
  2. Trim down the large crescent moon-shaped fat section between the point and the flat, ensuring a smooth transition. Trim any excess or loose meat and fat from the point. Square the edges and ends of the flat.
  3. Flip the brisket over and trim the top fat cap to about 1/4 inch thickness across the surface.
  4. Apply a thin coat of yellow mustard as a binder. Once the yellow mustard has been applied, you will now apply a generous amount of Cattleman’s Brand Seasonings Brisket & Steak Seasoning to the entire brisket (front, back and sides). We prefer to season the brisket the night before or several hours before cooking allowing the flavors to soak in.
  5. Preheat pellet cooker to 290⁰F.  Once the grill is heated, place the seasoned brisket directly on the pellet grill with the point end facing the main heat source.  Close the lid. 
  6. After 20 minutes of cooking, flip and sop your brisket with the sop of your choice.  Repeat this step every 20 minutes until the internal temperature is between 160⁰F and 165⁰F.  This could take 3-6 hours depending on the size of your brisket.
  7. Once the brisket has reached between 160⁰F and 165⁰F, remove the brisket and wrap completely with foil or butcher paper leaving no openings.  Place the wrapped brisket back on the grill, close the lid and cook until the internal temperature reaches 205⁰F.  This could take 4-6 hours depending on the size of your brisket.
  8. Once the brisket reaches 205⁰F, remove the brisket from the grill.  Keep the brisket wrapped, and allow it to rest for an additional hour.
  9. After the brisket rests, remove it from the foil or butcher paper, and place it on a cutting board. Using a sharp knife, slice both the point and the flat against the grain. Serve your Texas Style Smoked Brisket immediately.
